Archlinux image with GUI makes no sense to me.
Archlinux is highly customizable, you can install whatever GUI you want.
Download rootfs ArchLinuxARM-armv7-latest.tar.gz and build your kernel, that's it.

I have tried the Arch linux image with the latest kernel (17/October/2015)  , running headless and idle and it crashes every 2 or 3 hours
Is this the expected behaviour?
Are the debian ubuntu images any more stable?
Basically I am looking for a linux image (don´t care much which one) that will run headless (don´t care about graphics) for weeks to eventually replace a couple of headless raspberry pies I have

How exactly it crashes ?
Any kind of crash is certainly not the expected behavior.
I have headless Debian on OPI running for more than a month, without any problem.
The most probable cause for a crash is bad sd card or bad power supply.

I connect via ssh
All of sudden the terminal is not responding anymore to the keyboard and pinging the opi fails.
It happens with 2 different sdcards, different brands and brand new.
Could you share the kernel you are using with your headless Debian?
Is it the 17/10/2015 ?

As for the power supply, I ordered them separately and they have not arrived yet ...
